Recipe Thursdays: Waldorf Salad

Summer temps have arrived, at least in our neck of the woods . . . why not enjoy a classic quick and easy Waldorf Salad from The ABC of Salads from the Peter Pauper Press collection of vintage cookbooks?

"Who can eat meat
In this hot, torrid weather?
Give me a salad as light as a feather!"

Waldorf Salad
Makes 6 servings

2 cups raw apples, diced
1 cup celery, diced
1/2 cup walnuts, chopped
1/3 cup mayonnaise
Lettuce leaves

1. Dice apples and celery in 3/8-inch pieces, and chop walnuts coarsely.
2. Combine with mayonnaise and salt. Mix well.
3. Place in refrigerator to chill.
4. Serve mounded on lettuce leaves with a Maraschino cherry as decoration.
