Recipe Thursdays: Stuffed Eggs with Ham

"Every experienced hostess knows that anything can be a canapé, and many a fine new combination has been the product of desperation. One of my own most successful creations was the result of unexpected guests, when in the face of an empty larder I fried up some mushrooms and onions and heaped them on hot toast. This week's featured recipe, Stuffed Eggs with Ham, is from The ABC of Canapés by Ms. Beilenson, our co-founder.

Stuffed Eggs with Ham

8 eggs, hard-boiled
1 can (3 oz.) ham spread
Juice of 1/4 onion
1/2 teaspoon prepared mustard
Salt and pepper to taste

1. Cut eggs in half lengthwise, remove yolk.
2. Mash yolks with deviled ham spread, moisten with mayonnaise, and add rest of the ingredients.
3. Stuff the egg whites with yolk and ham mixture and serve granished with watercress.
