Baked Custard – Spain
Makes 6 servings
6 egg yolks
1/4 cup sugar
1 cup milk
1 cup light cream
3/4 tsp. vanilla
1/8 tsp. salt
*For extra sweetness, add a carmel glaze.
1. Beat egg yolks, then stir in the rest of the ingredients.
2. Put six custard bowls in a baking dish, the sides of which are higher than the bowls, then pour boiling water into the pan until the water level almost reaches the sides of the bowls.
3. Pour custard mixture into bowls, and bake at 350° for about half an hour, or until a knife inserted into the custard comes out clean.
Serve either hot or cold.
